Infusion #2 Remy Martin V & Camomile

One time, I have tasted a Grappa with Camomile flavor and fell in love.
However, good Grappas are pretty pricy.
Remy Martin V is a Cognac that's made similar to Grappa, it re-ferment the skins and remains of making Cognac.
It doesn't have the great heavenly aroma of Grappa, but the taste is very gentle, clean, and polished.
This liquor was ideal for making my own infusion of Brandy / Camomile.

One of the most important thing of making a Liquor infusion is when to stop. Especially with teas, infusing too long will do the same effect of leaving the tea in the hot water for long time, it gets the tannin and bitterness and you can't really fix that.
On the other hand, you do need to put a good amount in the liquor to get the flavor.

Camomile has great flavors so infusing for only one night did the job. I made a cocktail that uses both this Cognac and the Strawberry Liquor 43, so I will post the recipe on my next post.
